first off what sixe race car is it?

second off nothing is going to get good gas mileage when towing a car.

The size of the car doesn't matter, the biggest fluctuation you're going to get is around 500lbs. Besides, just because it's bigger doesn't mean it's heavier. Hell, a 426 Cuda weighs about as much as an 00-04 Mustang... don't know the weights of the others, but probably close also.

You've obviously never heard of a diesel before.

I'd go with a 6.5 suburban if I absolutely had to tow with a SUV, though they aren't made to tow something so heavy, really.

Is it an enclosed trailer or an open one? If it's a closed one I'd suggest a truck.. get a quad cab or something along those lines so you get your interior space, then you have the box to haul something, and then you have the suspension to carry an eclosed trailer.

If it's open a SUV shouldn't have much trouble towing it.

Since you'll be towing another car, you shouldn't have any trouble towing if you get pretty much any full sized truck. Pickup trucks like the F-150, Chevy Silverado, and Nissan Titan are great towers. Full-sized SUV's such as the Tahoe, like you said, Suburbans, Yukons, Expeditions, or Toyota Sequoia are very good for hauling stuff too. You should have enough power with any truck engine to tow, so I wouldn't consider getting a more powerful diesel because you will probably be wasting more gas.
