Tahoe shutting off after 1 hour of highway driving

2002 Tahoe (202000miles) shuts itself down only when driving on trips of 1 to 2 hours long when highway driving. I'll pull off the road wait for 30 minutes and the vichicle will last for about another 30 to 40 minutes before shutting down again.

When I drive in the city it for local trips with both highway and city driving nothing happens. Temp., volatage, oil pressure all look great. Just before shuttin down the Tahoe feels like it loses fuel for a second and then it shuts down about a mile or two after that. I have to coast, every thing just shuts itself down going 70-80 miles an hour.

I've done the following{
1. Coolant flush
2. Got rid of the Catalitic Converter
3 Tested car on Dyno Machine (O2 Sensor after CC are testing bad, along with Knock Sensor. Was told by tech that o2 was not the cause.

Help?

3) downstream o2 sensor testing bad b/c some jackoff hollowed out the catalytic convertor for no good reason...
